Vegan Korean Inspired Bulgogi Bowls
You are taking leftovers for lunch tomorrow so don’t forget to set some aside! If you haven’t had kimchi before, you are in for a treat. Kimchi is a Korean staple made from fermented vegetables; you can find it in most grocery stores in the fridge portion of the produce aisle. If you do not care for kimchi, Pickled Red Onions will also work! Top this bowl with homemade vegan spicy mayo. You can substitute tofu or tempeh for the ground, if desired.
