400gbowtie noodles

1lbsground (beef, chicken, turkey or veggie ground)

1yellow onion(s), diced

2garlic clove(s), minced

1zucchini(s), grated

4carrot(s), grated

2Tablespoontomato paste

2Tablespoonlow sodium soy sauce

2Cupstock

.5Cupshredded cheddar cheese

Salt & pepper, to taste
Plant-Based Option
Use veggie ground and vegan cheddar.
Gluten Free Option
Use GF pasta and panko.
INSTRUCTIONS
Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain when done.
While the pasta cooks, in a large frying pan over medium heat brown the ground; if using veggie ground or very lean meat add 1 tablespoon of oil to the pan prior to adding the ground. Once the ground is cooked, add the onions and garlic and continue to cook over medium heat until the onions are translucent and soft, around 3-4 minutes.
Add the zucchini, carrots, and half of the stock and cook until the vegetables have cooked down and softened, 8-10 minutes. Add the tomato paste, soy sauce, ketchup, and remaining stock and continue to cook until the sauce has thickened slightly, 3-4 minutes.
Add the cooked noodles to the sauce and stir to combine. Season with salt and pepper to taste.
Preheat the oven to broil. In a small bowl, stir together the cheese, panko, oil, and garlic powder. Transfer the pasta to an oven safe dish, top with the panko mixture and broil 1-2 minutes until golden and the cheese is melted.
