All the flavours and textures of a classic lasagne, but in a comforting soup! Our pro tip is to keep the cooked noodles on the side until ready to enjoy to keep the soup from getting too thick. Then stir them in and top with parmesan, mozzarella, and basil! Any noodles are delicious here if you don’t have any lasagna noodles on hand. Try your hand at making your own marinara sauce for this recipe.

    lasagna noodles, broken into pieces if desired

Plant-Based Option

Use veggie ground, vegetable stock, and vegan cheese alternatives.

Gluten Free Option

Use GF stock and lasagne noodles.

INSTRUCTIONS

1.

Add the ground to a large pot over medium high heat (add a little bit of oil if using a lean ground). Brown the ground 5-6 minutes until cooked through. Add the onion and cook until soft and translucent, around 4-5 minutes.

Add the garlic, Italian seasoning, and dried oregano and cook until fragrant, around 30 seconds. Add the tomato paste, marinara sauce, and stock, stir and bring to a simmer. Cover and let cook 15-18 minutes. Season with salt and pepper to taste.

Meanwhile, bring a large pot of salted water to a boil. Cook the lasagna noodles until al dente, drain and set aside.

4.

Add the spinach to the soup and cook until wilted. Just before serving, stir in the lasagna noodles and top with parmesan, mozzarella, and basil.
