INGREDIENTS

    olive oil
  • 2
    garlic clove(s), minced

    yellow onion(s), diced
  • 1
    - 798 mL can(s) crushed tomatoes
  • 1
    Teaspoon
    dried oregano
  • .25
    Cup
    basil, fresh, loosely packed
  • 1
    Teaspoon
    sugar
  • Salt & pepper, to taste

INSTRUCTIONS

Add the olive oil to a large pot over medium high heat. When the oil is hot add the onions and cook 4-5 minutes until soft and translucent. Add the garlic and cook until fragrant, around 30 seconds.

Add the tomatoes and oregano and bring to a simmer. Remove from the heat. Use an immersion blender to blend until smooth, adding the fresh basil halfway through. Season with salt and pepper to taste and store in an airtight container in the fridge until ready to use.
