GF Green Ceviche
This is a no-cook, fresh and flavourful dish, perfect for a light summer meal. If you’ve never had ceviche, the acidity in the lime juice “cooks” the fish, making it firm and opaque as it marinates. If you don’t have access to sushi-grade fish we recommend pan-searing the fish on each side around 1 minute before making the ceviche. For heartier appetites, serve alongside some Guacamole or our Cowboy Caviar Quinoa Salad.
