1Cupquinoa, uncooked

1- 398 mL can(s) black beans, drained & rinsed

.5Cupfrozen corn, thawed

1sweet bell pepper(s), finely diced

.25red onion(s), finely diced

1avocado(s), diced

.25Cupcilantro, chopped

3Tablespoonolive oil

1garlic clove(s), minced

1lime(s), juiced

2Teaspooncumin

.5jalapeño(s) (optional), finely diced

Pinch of sugar

Salt & pepper, to taste
INSTRUCTIONS

Cook the quinoa according to package directions. When cooked, fluff with a fork and let cool.

Combine the black beans, corn, bell pepper, red onion, avocado, cilantro, olive oil, garlic, lime juice, cumin, sugar and cooked quinoa in a large bowl. Season with salt and pepper to taste.
