This Cowboy Caviar Quinoa Salad is full of colour, flavour and hearty vegetables! The perfect light salad, you can also leave the quinoa out of this recipe and serve as salsa to complement any meal.

INGREDIENTS

    quinoa, uncooked

    - 398 mL can(s) black beans, drained & rinsed

    frozen corn, thawed

    sweet bell pepper(s), finely diced

    red onion(s), finely diced

    avocado(s), diced

    cilantro, chopped

    olive oil

    garlic clove(s), minced

    lime(s), juiced

  • Pinch of sugar
  • Salt & pepper, to taste

INSTRUCTIONS

Cook the quinoa according to package directions. When cooked, fluff with a fork and let cool.

Combine the black beans, corn, bell pepper, red onion, avocado, cilantro, olive oil, garlic, lime juice, cumin, sugar and cooked quinoa in a large bowl. Season with salt and pepper to taste.
