This is an easy weeknight take on Charles’ Famous Chicken Parmesan. If you want to take the recipe to the next level you can make your own marinara sauce. We enjoy this meal with a side salad to make it a little lighter; add any veggies you wish!

Plant-Based Option

Gluten Free Option

Use a GF 1:1 all-purpose flour and GF panko.

INSTRUCTIONS

1.

Preheat your oven to 425 F and line a baking sheet with parchment paper.

Place your chicken breasts between two sheets of wax or parchment paper and pound your chicken breasts with a mallet or rolling pin until ½ inch thick. Season each chicken breast on both sides with salt and pepper and set aside on a plate at room temperature.

In a shallow medium bowl (such as a pie dish), combine the flour, garlic powder, sweet paprika, onion powder, salt and pepper and stir to combine. Set aside. In another shallow bowl, whisk the eggs.

In another shallow large bowl, place the panko, oil, and half of the Parmesan cheese in the bowl and season with salt and pepper. Take each chicken breast and lightly dredge in the flour mixture, followed by the egg and ending with the panko mixture. Make sure that each piece of chicken is lightly coated on all sides.

Place the lightly coated chicken breasts on the prepared baking sheet, bake until the chicken is golden and has reached an internal temperature of 165 F, approximately 12-15 minutes. Turn the oven to broil. Top the chicken with the marinara sauce and mozzarella and broil 1-2 minutes until the cheese has melted.

6.

While the chicken is baking, toss together the side salad to serve with the chicken once it has baked.
