Vegan Carrot Cake Overnight Oats

You can make this recipe into a cooked oatmeal if you prefer (do it the morning of, not in advance) – simply cook the oats according to the package instructions and add in the carrot, apple and spices with the oats. Serve with plant-based milk and maple syrup. If you have raisins, blueberries, walnuts, or pecans feel free to add them!
