This recipe is a fun twist on a classic! The roasted chickpeas add such a nice flavourful crunch. For any big appetites try adding sliced chicken breast, tofu, or cooked shrimp. We recommend waiting to dress this salad until you are ready to enjoy it.

Plant-Based Option

Use vegan mayonnaise and vegan parmesan cheese.

Gluten Free Option

Use GF croutons.

INSTRUCTIONS

Preheat the oven to 400 F and line a baking sheet with parchment paper.

Pat the chickpeas dry and toss with the oil, salt, paprika, and garlic powder. Evenly distribute on the baking sheet and bake for 20-30 minutes until crispy.

3.

Whisk together the dressing ingredients, adding a little bit of hot water to thin as needed. When ready to eat, toss the lettuce with the croutons, chickpeas, and dressing.
