
Sweet Potato Gnocchi

Tender, pillowy gnocchi made a little more wholesome with sweet potato. It comes together in a few simple steps, then gets tossed in brown butter and sage and toasted until golden. We love scaling this up and freezing extra (uncooked) gnocchi on a sheet pan to keep on hand for a future dinner.
Note that ½ large sweet potato should yield approximately 1 cup mashed sweet potato.
