INSTRUCTIONS

Bring a medium pot of salted water to a boil. Cook the macaroni noodles until al dente and drain. Set aside 2 cups of cooked noodles for the Caprese Pasta Salad and refrigerate.

Heat a large heavy-bottomed pot over medium heat, add the ground and cook for 3-4 minutes. Add the onions and cook for 2-3 minutes until the onions are soft and translucent. Add the grated vegetables and cook for 1-2 minutes. Add the water and continue to cook until the vegetables have cooked down and are soft, 10-12 minutes, adding more water as needed.

Add the paprika, garlic powder, onion powder, chili powder, turmeric, tomato paste, and flour. Stir to combine and cook for 1-2 minutes. Add the stock and milk and stir to create a sauce. Add the cooked macaroni noodles and cheddar cheese and stir until combined. Season with salt and pepper, divide into bowls, and enjoy!
