We love Sneaky Mommy anything, and these enchiladas are in our frequent rotation. If you want to be extra sneaky, use the smaller side of your grater for your vegetables and they’ll be harder to notice. We love making our own enchilada sauce (it’s so easy!) but you can buy it at the store if preferred (no judgment here). Add a side salad to round out the meal!
