Slow Cooker Vegetable Stock
Making your own vegetable stock doesn’t get any easier than this! Simply add your ingredients to the pot, set the timer and you are good to go. This recipe freezes great and is a great way to use up vegetables that are on their last leg. You can get creative with the vegetables you add in here. Some other great suggestions are turnips, fennel fronds, green onion ends, fresh thyme, corn cobs, or leeks.
TIP: Store carrot peels, onion scraps, celery leaves, and other veggie scraps in a bag in the freezer. When the bag is full you can make a batch of this delicious stock.
