Adjust the seasonings to taste and serve with your desired toppings! You can make your own taco seasoning if desired. Add an extra tablespoon or two of water when cooking if you wanted your veggies to be extra hidden. We topped our tacos with jalapeños, lime, and hot sauce.

Plant-Based Option

Use veggie ground and vegan cheese and sour cream.

Gluten Free Option

Use GF taco shells.

INSTRUCTIONS

1.

Heat a large frying pan over medium heat (add 1 tablespoon oil if using a lean meat or veggie ground). Brown the ground for 5-6 minutes then add the taco seasoning. Stir until fragrant 1-2 minutes.

Add the carrot, zucchini, and salsa. Cook for 8-10 minutes, until the vegetables are soft and cooked down.

3.

Use a slotted spoon to serve or consider draining out any excess liquid depending on how saucy you want your tacos!
