If you want to make this even heartier, you can double up on the veggies! If you have leftover peanut sauce it makes a great dressing to go along with your big batch salad. Have everything ready and beside the stove as this comes together quickly. Omit the peanuts and use tahini instead of peanut butter for the dressing to make it nut free.
