If you like a little bit of spice, you can transform these into spicy honey hot chicken sandwiches by tossing your cooked chicken in buffalo sauce or adding a dash of it into the honey mustard sauce itself! You can substitute boneless skinless chicken thighs for chicken breasts if desired.

Gluten Free Option

Use GF panko, GF 1:1 all-purpose flour, and GF hamburger buns.

INSTRUCTIONS

1.

Preheat the oven to 400 F and place a piece of parchment paper on top of a large baking sheet. If your chicken breasts are thick, pound out your chicken breasts to 1” thick or butterfly the breasts.

Make the Panko mixture. In a large frying pan heat the 1 tablespoon of olive oil on medium heat. Combine all of the remaining panko mixture ingredients together in a shallow bowl or pie plate and pour them into the pan. Stir constantly until the panko is lightly toasted and fragrant, about 2-3 minutes. Pour the mixture back into the original shallow bowl or pie plate.

In another medium shallow bowl or pie plate, whisk the eggs together until well-beaten.

In a third shallow bowl or pie plate stir together the flour mixture ingredients until well-combined. Using your hands, take a piece of chicken, coat it on both sides in the flour mixture shaking off the excess.

Next coat each piece with the egg mixture and finish by pressing each side into the panko mixture, shaking off the excess. Place the piece of chicken on the prepared baking sheet and repeat with the remaining chicken pieces, being careful that the pieces do not touch. Once the pieces are all coated and placed on the prepared sheet, place the pan in the oven and bake until they are golden brown, approximately 25-30 minutes or until the internal temperature reaches 165 F.

While the chicken bakes, mix together your honey mustard sauce and prepare your burger toppings. Assemble your burgers with the honey mustard sauce, lettuce, cucumber, chicken, and red onion.
