These grain bowls combine vegetables roasted with warm spices served atop creamy white bean puree. Farro is a whole grain that’s high in fibre; quinoa or brown rice make great substitutes if needed. Whole-grain farro is the most nutrient-dense, but pearled or semi-pearled farro will also work well in this recipe, and cook more quickly.
