This Greek Roasted Chicken & Potatoes comes together in one dish and is so flavourful, thanks to fresh herbs and lemon. The whole dish can be prepped ahead and kept in the fridge- just make sure to bring to room temperature before baking! You can substitute an equal weight of bone-in chicken breasts or thighs instead of a whole chicken if desired. Note that the baking time will vary based on the size of your chicken; make sure to use a meat thermometer to determine when it’s done (the minimum temperature should be 165 F).
