GF Summer Squash Salad
Thinly sliced raw zucchini is the highlight of this salad: paired with quinoa and dressed with a lemon-herb dressing, this makes for a fresh and delicious lunch, or add some chicken or shrimp for a light dinner. If you have one, you can use a mandoline for slicing the zucchini to create long ribbons; a vegetable peeler or knife will work too. You can swap in goat cheese for the feta if you’re a fan!
