GF Spanakopita Rollups
These rollups are great with homemade tzatziki and a Greek salad (with chickpeas added for extra protein!). If making ahead, let the rollups cool completely before you package them in a container in the fridge to keep them as crisp as possible. If you can’t find GF phyllo or puff pastry replace it with GF pie crusts and make this into a savoury pie instead!
