Chili is one of those dishes that gets better after it sits. I love serving mine with taco chips as an alternative to the quinoa should you prefer. You can add more or less chili powder to taste, depending on how spicy you like your chili. Freeze the leftover chili for a rainy day! Serve with shredded cheddar cheese, sour cream, cilantro, avocado, and quinoa (optional).
