This soup is loaded with nutrition and so hearty! Note that you can use a traditional blender to puree the soup, just make sure that you remove the vent cap from the top of the blender and place a dish towel over the hole before blending if you are blending hot soup. You can add nutritional yeast to this soup if you have it on hand to bring out the flavour or a touch of cream to make it a bit richer should you wish.
