GF Minestrone Soup
This makes enough soup for 2 days worth of lunches. It freezes well without the macaroni if you happen to have any leftovers – just add cooked macaroni before serving once thawed. Cooking the macaroni separately helps prevent the soup from getting too thick. The remaining tomato paste from the can will be used in your enchilada sauce later this week should you choose to make your own.
