We can’t get enough of these cucumber sushi boats! They’re easy to whip together and make for such a fun lunch. For heartier appetites, you can add a side of rice. If you don’t like tuna, you can substitute shredded cooked chicken or smashed chickpeas. Drizzle some Spicy Mayo over top before serving for an extra kick!
