GF Crunchy Tofu Kale Salad
Coating the tofu with quinoa adds incredible texture and an added boost of protein to this salad! You can bake or air fry the tofu instead of frying it: simply drizzle in a couple of tablespoons of oil into the quinoa and mix together before coating, then bake at 425 F or air fry at 360 F until golden brown. For some extra protein, add cooked chicken or shrimp before serving.
