Chunky Monkey Oatmeal
Peanut butter, chocolate, and banana…can you think of a more delicious combination?! This oatmeal tastes like dessert but is also balanced with protein and healthy fats from the peanut butter and complex carbohydrates from the oats. It’s a great way to start your day off strong. The kiddos are going to love this too!

1Cupmilk of choice
1Cuplarge flake oats
1Tablespoonmaple syrup, (or more to taste)
Pinch of salt
2Tablespoonsmooth natural peanut butter
0.25Cuproasted peanuts, roughly chopped
Substitute a seed butter or nut butter for the peanut butter. Omit the crushed peanuts.
Use a plant-based milk and plant-based chocolate chips.
Ensure your oats are GF.
Bring the water and milk to a boil in a small saucepan. Add the oats, maple syrup, vanilla and salt and cook over medium heat for approximately 10-15 minutes, stirring occasionally.
Top with the peanut butter, banana, crushed peanuts, and chocolate chips. Serve with extra milk if desired.
