
Chunky Monkey Oatmeal

This oatmeal tastes like dessert but is also balanced with protein and healthy fats from the peanut butter and complex carbohydrates from the oats. It’s a great way to start your day off strong. 1Cuplarge flake oats

1Tablespoonmaple syrup, (or more to taste)

0.5Teaspoonvanilla

Pinch of salt

2Tablespoonsmooth natural peanut butter

1banana(s), sliced

0.25Cuproasted peanuts, roughly chopped

2Tablespoonchocolate chips
Nut-free option:
Substitute a seed butter or nut butter for the peanut butter. Omit the crushed peanuts.
Plant-based option:
Use a plant-based milk and plant-based chocolate chips.
Gluten-free option:
Ensure your oats are GF.
INSTRUCTIONS
Bring the water and milk to a boil in a small saucepan. Add the oats, maple syrup, vanilla and salt and cook over medium heat for approximately 10-15 minutes, stirring occasionally.
Top with the peanut butter, banana, crushed peanuts, and chocolate chips. Serve with extra milk if desired.
