If you’ve ever been intimidated by making your own Hollandaise before, you’re not alone! This Cheater Eggs Benny has a super simple, ‘cheater’ version of a hollandaise sauce that makes it possible to have homemade Eggs Benny any time you want. You can get creative with what you want to top your English muffins with, we went slightly traditional with some deli sliced turkey, avocado, and a poached egg.

    slices deli-sliced turkey breast

    vinegar
  • For the Hollandaise
  • 2

    mayonnaise
  • 2

    sour cream
  • 1

    butter, melted

    Dijon mustard

Use GF English muffins.

INSTRUCTIONS

1.

Pour an inch of water into a small pot and bring to a simmer over medium heat.

In a glass bowl, whisk together the mayonnaise, sour cream, melted butter, lemon juice and Dijon mustard.

Place glass bowl over the simmering water. Whisk mixture together until warmed, season to taste with salt and pepper. Keep warm until ready to serve.

Fill a large frying pan or shallow pot three quarters full of water and add the vinegar. Bring to a gentle boil. Crack eggs into individual small bowls or ramekins, gently stir the water in a circular motion and drop eggs into the water. For soft eggs cook 3-4 minutes or longer as desired. Use a slotted spoon to remove the eggs from the water and let them rest briefly on a paper towel to absorb the excess water.

While the eggs are cooking, toast the English muffins, butter if desired, and layer on the turkey, sliced avocado and eggs. Top with a dollop of warm hollandaise.
