This Cheater Eggs Benny has a super simple, ‘cheater’ version of a Hollandaise sauce that makes it possible to have homemade eggs Benedict any time you want. You can get creative with what you want to top your English muffins with, we went slightly traditional with some deli-sliced turkey, avocado, and a poached egg. These can also be made into a breakfast sandwich, swapping the poached egg for a fried one.
