Beet & Cucumber Farro Salad

Taking inspiration from Ukrainian beet and cucumber salads, we’ve added farro and chickpeas for protein and topped this salad with creamy goat cheese and crunchy pumpkin seeds. For a shortcut, you can find precooked beets in the produce section of most grocery stores! Feel free to substitute feta for the goat cheese if preferred.
