This salad is chock-full of delicious and nutritious ingredients. The orange adds some sweetness, green apple adds a tart crunch, and the cucumber adds some freshness. If you happen to have them in your pantry, croutons also make a delicious addition to this salad. Salmon is a great swap for the chicken breast if you prefer, and if you don’t have time to marinate the chicken it will still taste amazing! If you are prepping this salad ahead, squeeze a little bit of citrus on your apples to prevent browning.
