High Protein Pepperoni Pizza Chicken
Serves 2
Total Time: 20 minutes
Ingredients:
- 2 boneless skinless chicken breasts
- 2 teaspoons olive oil, divided
- 1 cup panko
- ½ teaspoon oregano
- 1 teaspoon garlic powder, divided
- ¼ teaspoon salt
- 2 tablespoons shredded Parmesan
- 1 egg
- 1/3 cup all-purpose flour
- Salt & pepper, to taste
- ½ – 213 mL can pizza sauce
- ½ cup shredded mozzarella cheese
- 25 g pepperoni slices
- ½ green bell pepper, sliced
- 1 cup arugula, to serve
Instructions:
- Preheat the oven to 450 F and line a large baking sheet with parchment paper.
- Place a chicken breast between two sheets of parchment paper and pound out to around ¼” thick (you want them to be as thin as possible without falling apart). Repeat with the remaining chicken.
- In a large pan, heat half of the olive oil over medium heat. Add the panko, oregano, garlic powder, and salt and toast until golden brown, stirring regularly. Stir in the Parmesan and transfer to a shallow dish.
- In a separate shallow dish, whisk the eggs until well-beaten.
- In a third shallow dish, combine the flour, salt, pepper, and garlic powder.
- Coat each chicken breast on both sides in the flour, followed by the egg wash, followed by the toasted panko. Place on the prepared baking sheet and repeat with the remaining chicken breasts.
- Bake the chicken for around 10 minutes, until it is golden brown and the internal temperature reaches 165 F. Remove the chicken from the oven and turn the oven to broil. Top each chicken breast with around 2 tablespoons of pizza sauce, pepperoni, green pepper, and a sprinkle of cheese and broil until the cheese is melted and golden, 2-3 minutes. Serve with arugula tossed with olive oil and a pinch of salt.
