Cheeseburger Lasagna
Charles made this Cheeseburger Lasagna for me the other night and the boys (and I) were head over heels in love! I scaled down the bacon and cheese to make it lighter on the nutrition side, but you can add those ingredients to your discretion. Omit the bacon should you wish!
Makes 4 servings
Total time: 75 minutes
Ingredients:
- For the meat sauce:
- 4 slices bacon (optional), diced
- 1 lb ground (beef, chicken, turkey, or veggie)
- 1/2 yellow onion, diced
- 1 zucchini, finely grated
- 2 tablespoons tomato paste
- 1 tablespoon garlic powder
- 1 tablespoon yellow mustard
- 1 teaspoon Worcestershire sauce
- Salt & pepper, to taste
- For the cottage cheese mixture:
- 1 cup cottage cheese
- 1/3 cup ketchup
- For the burger sauce:
- 1/4 cup mayonnaise
- 2 teaspoons ketchup
- 2 teaspoons relish
- 1 teaspoon rice vinegar
- 1/2 teaspoon yellow mustard
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- To assemble:
- 6 lasagna noodles
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella
- 1/4 head iceberg lettuce, shredded
- 1 dill pickle, sliced
- 1 tomato, diced
Instructions:
- Preheat the oven to 375 F. Cook the lasagna noodles according to the package directions (reserve the pasta water before discarding).
- Heat a large pan over medium heat with the bacon. When the bacon is crisp, transfer to a plate lined with paper towel, remove most of the fat from the pan, and increase the heat to medium-high. Add the ground and cook 5-6 minutes until almost cooked through. Add the onion and zucchini and cook until soft, around 4-5 minutes.
- Stir in the cooked bacon, tomato paste, garlic powder and mustard and cook for around 2 minutes. Season with salt and pepper to taste and thin with a drizzle of pasta water, a tablespoon at a time, to loosen the sauce to a point where you can spread it over your pasta noodles.
- In a small bowl, combine the grated mozzarella and cheddar. In a medium bowl, stir together the cottage cheese and ketchup.
- Grease an 8×11″ baking dish (or a 9×9″ dish) and line the dish with a single layer of noodles to cover. Spread ½ of the meat sauce on the noodles. Sprinkle ¼ of the grated cheese on top and add another layer of noodles. Spread the remaining meat sauce on top and sprinkle with ¼ of the grated cheese.
- Spread the cottage cheese mixture on and top with the remaining grated cheese.
- Cover with aluminum foil and bake for about 45 minutes, until it is bubbling and golden. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbling.
- While the lasagna bakes, stir together the burger sauce ingredients.
- Let the lasagna rest for 5 minutes before cutting and serving with the lettuce, tomatoes, pickles and Big Mac Sauce as desired.
