This dinner comes together nice and quick for nights when you’re in a pinch! We recommend the using fresh grated ginger here (as opposed to jarred) as it adds so much flavour. If you aren’t a fan of mushrooms, you can substitute them for another vegetable but note that you might want to increase the amount of sauce.
