We love the addition of halloumi into this salad, but you can leave it off or add another protein like chicken or shrimp. You could also grill the halloumi on the BBQ and skip toasting the chickpeas and almonds if you want a backyard dinner! You can also pre-toast your chickpeas and almonds for an even faster dinner.
