Italian Chopped Salad
This Italian Chopped Salad is light and refreshing for summer! The pepperoncini are optional here, but they add so much flavour. To make this heartier you can also add sliced avocado. We recommend waiting to cut your tomatoes until ready to serve. If you have extra time, we recommend tossing the quinoa with oil, garlic powder, and onion powder and baking on a parchment lined baking sheet at 425 F for 15-20 minutes for delicious crispy quinoa.
