We love a good weeknight curry and this Coconut Green Curry comes together nice and quick. You can flex the protein or vegetables here depending on what you have on hand! This recipe starts with just a little bit of curry paste, we suggest adding more to taste depending on your spice preference. You can simmer your sauce for 5-10 minutes longer before adding the shrimp if you prefer a thicker curry sauce.
