Chickpea Corn Fritters
A vegetarian meal that checks all the boxes: plant-based protein from chickpeas, loaded with veggies and a crave-worthy Southwest ranch for dipping! We pair these with a side salad or veggie sticks as an entreé, but they also make a fantastic appetizer. These are extra delicious with some cheese mixed in if you have any on hand: cheddar, Monterey Jack and feta are our favourites!
